Layered Almond Carrot Cake

This delicious layered almond carrot cake can be altered, but this is my personal favorite version of my carrot cake recipe. If you don’t like almonds, you can substitute them for pecans or walnuts, or just eliminate them. You can also serve as a single layer cake to save time, but the layers nicely distribute the frosting between the cake.

Cake ingredients:

pinch of salt

2 teaspoons baking powder

2 teaspoons baking soda

1 Tbsp. vanilla extract

2 tsp. cinnamon

2 tsp. nutmeg

2 cups granulated sugar

2 cups flour

1 1/4 cup vegetable oil

4 eggs

3/4 cup crushed almonds

3 cups grated carrots

Frosting and topping ingredients:

1 cup sliced almonds

16 oz. cream cheese (room temperature)

1 cup confectioners sugar

1 tsp. vanilla extract

1. Preheat oven to 350F. Grease and flour 13×9 inch cake pan. In a medium bowl, mix together all cake ingredients except for the carrots and almonds. After mixture is well blended, fold in grated carrots and crushed almonds. Pour into your prepared cake pan. Sprinkle lightly with cinnamon.

2. Bake cake at 350 degrees F for 35 to 40 minutes, or until toothpick comes out clean. Make sure not to over-bake.

3. While cake is baking, prepare frosting. Beat sugar and cream cheese until well blended. Add vanilla and beat a little more.

4. Cool off cake, then cut cake in half vertically, then slice  in half horizontally. Frost the first layer with approximately 1/5 of the frosting, then top with another layer. Repeat until you have four layers frosted. Use remaining frosting to frost top and side. Sprinkle sliced walnuts on top and pat on side of cake.

TIPS: The cake might crumble a little while you are frosting if your cream cheese isn’t warm enough. You can cover up any messy parts with almonds. Refrigerate until eating. Cake is best one day after it is made.

    1. Lol. It doesn’t hurt to eat a bite or two of cake every now and then… the trick is to balance it out with a good workout 😉 I actually think it’s better to have sweets every now and then instead of depriving yourself, but I’m sure it works differently for everyone 🙂

      I bake for family get together’s (with my real family 🙂 ) and blog in my spare time. It’s a little hard finding time to do everything, but I like to get up early in the morning and work on things like this.

  1. I have not had GOOD carrot cake since my Grandma died … I am SO Looking Forward to baking this and Bringing back Loving Memories to my Mouth 😀

    1. Aww.. I’m sure there isn’t a carrot cake in the world that would come close to what your Grandmother was able to serve you, since I’m sure she was a special person. Hopefully this will come close to the taste though 🙂

I have to agree it was the best carrot cake I have ever tasted.   4. This sounds delicious and a wonderful way to distribute the icing so you are more likely to get a bit of icing with each mouthful of cake. I feel the diet going right out the window. I live about 90 minutes from a major Amish community in PA and have always loved Amish cooking. Even my grandmother was influenced by growing up close to an Amish community. Always had great food when visiting the community in PA. You share so kindly and it is much appreciated. Your determination to succeed should be inspiring to those with dreams. I cannot wait to try this carrot cake. Thanks for sharing.

    1. When I was younger, my brother would sometimes ask me if I was having icing with my cake or cake with my icing? That’s how much I love frosting, lol. Layer cakes allow me to enjoy cake frosting with every bite:) Enjoy making the recipe. Let me know how it turns out.
